Roast Leg of Lamb
Preheat oven to 450 degrees - Lamb should be at room temputure
You will need a large roasting pan for this recipe:
- Olive Oil
Combine in a food processor/blend til a paste like substance forms to rub onto the lamb. In the Spring the lamb tends to be lean, you also may add Pancetta. Rub the Rosemary paste all over the surface of the lamb.
For more flover you may add:
Slice 1 large onion, 1 large carrot, and a quart of poatoes and place them on the bottom of your roasting pan. Place the leg of lamb on top of the vegitables and add 1/3 cup of olive oil over the lamb.
Place in the oven (uncovered) for 15 minutes. Reduce the temputer to 350 degrees. At this point you may pour 1 cup of dry white wine over the lamb and countine to roast for 1 hour
Baste* a couple of times and add a little water if the juices start to burn your roasting pan
Once the leg of lamb is cooked, transfer the lamb to a carving platter and let rest for 10mins before you carve.
Baste* - to pour juice or melted fat over the meat in order to keep it moist while cooking
